Lunch at Susanne's: A Life in Smørrebrød

Susanne was 16 when her grandfather told her about a hotel looking for someone to make sandwiches. She took the job and ended up spending her entire working life in the world of Danish smørrebrød.

That first job took her from her native Fyn to North Jutland, then to a ski hotel in Norway and eventually Copenhagen. While her brothers stayed close to home, Susanne was always the one curious about what lay beyond it. No one had encouraged her to leave; she simply wanted to go:

“I was looking for more freedom.”

She found plenty of it. Susanne has travelled every year since she was 18, while building a career that eventually took her to one of Copenhagen's most iconic institutions: Tivoli Gardens. She spent 15 years there as Head Chef of the cold kitchen at Grøften, preparing the traditional Danish food she knows inside out.

Susanne has lived in Copenhagen for 35 years, in the neighbourhood of Vesterbro, and remains endlessly curious. She's walked the Camino three times, recently went back to school simply for the experience of learning something new, and still travels whenever she can.

“I've learnt a lot on the Caminos. Travel makes you more open. You listen to people, and you feel like they're listening to you.”

It's one of the reasons she wants to open her own table to people from around the world.

    About Lunch with Susanne

Join Susanne in her Vesterbro home for a proper Danish lunch, prepared by someone who has spent almost 50 years making it professionally.

Along the way, Susanne will share stories from her years in Tivoli, the traditions and practices behind Danish lunch culture, and how Copenhagen and her neighbourhood of Vesterbro have changed over the 20 years she's lived there.

But Susanne is just as interested in the people sitting across from her. Expect a relaxed afternoon of good food, stories and conversation that can go wherever the table takes it.
